Beansies...

Beans- my girls LOVE beans. When Cater sees we are having beans, she gets all excited. She has really loved any beans she has had the past few months. Selina loves them too and they love to chant "Beans, Beans" when I ask them what they want for dinner on any given evening.

I think this is all a little odd, but whatever floats their boats.

So I am making my Weight Watchers Taco Soup right now. It calls for a few different beans. I have not made it for Cater since she decided that beans are the best food in the world as I don't like to make soups in the summer.

The weather was finally a little chilly yesterday (like in the 70's or something) because remember, while I don't live in Africa, I am in a desert. So I am making Taco Soup today because they are playing Christmas songs on the radio even though I am in capris and flip flops still.

In case you want to make it yourself, here is the recipe...

Taco Soup
1 lb ground turkey (I use beef, which takes Weight Watchers out of the title I suppose)
1 can pinto beans
1 can black beans
1 can red beans
1 can Mexicorn
1 can Mexican stewed tomatoes
1 can Italian stewed tomatoes
1 chopped onion
1 packet taco seasoning
1 packet ranch dip seasoning
1 cup water

Put in crock pot

I will be serving this for my girls tonight. I have cleverly renamed it to "Beansie Bonanza" in hopes that it will conjure up some excitement prior to being served.

The question is... will it be a hit or miss?....

These are the girls that LOVE macaroni and cheese too but only from the box. I go out of my way to make Patti LaBelles Over the Rainbow macaroni and cheese and they all complain that it isn't the stuff in the box.

So I am thinking the "Beansie Bonanza" will be a miss... we will see.

mmmmm... I love that soup. We ate it with corn bread probably every week last winter. I can't wait for the temps to drop so we can break out the crock again.
